How to Make Humus Tahini From Scratch - Two Methods How to Make Sfeha aka Lahm bi Ajeen (Meat Pie) How to Prepare Chicken Shawarma From Scratch
Humus Tahini is one of my all time favorite foods, both as a side dish, an appetizer, a main dish (as a sandwich), and everything in between. It brings together healthy dry gerbanzo beans for complex carbs (chick peas), fresh tahini with protein and healthy fats (sesame seed paste), garlic, lemon, olive oil, and that amazing smooth taste!


I'm going to show you two similar methods, one with dry chick peas soaked, and one with a can of precooked chick peas. I didn't add proportions in there because it is fairly hard to mess this up. Just try to feel the difference ingredients and bring them into harmony according to your individual taste.Here's what you'll need:

Ingredients

  • Dry chick peas (any size is okay, 9mm is my preference) for method #1
  • Precooked Canned Chickpeas (any brand is fine)
  • Tahini (Sesame Seed Paste)
  • Fresh Garlic Cloves
  • Lemon Juice
  • Plain Yogurt
  • Salt
  • Olive Oil
  • Paprika Ground or Your Preferred All-Purpose Seasoning
You will also need
  • Small Mixing Bowl
  • Blender / Food Processor
  • Plate to Serve
  • Mixing / Straining Utensils

Method #1 Prep & Cooking Instructions:

1. Soak the dry chick peas (gerbanzo beans) over night after washing them.
2. Once soaked, boil the chick peas for about 45 minutes or until they are soft and mashable.
2. Mince or crush the garlic, add to the mixing bowl, along with the lemon juice, olive oil, plain yogurt, and salt (to taste, it's up to you
3. Add the cooked gerbanzo beans to the blender/food processor, along with all the ingredients from the mixing bowl, along with the Tahini.
4. Blend all ingredients until the desired texture (really fine or coarser), and add water slowly as to get to the desired consistency.
5. Serve with pita bread, crackers, chips, or veggies! Enjoy!


Method #2 Prep & Cooking Instructions:


1. Drain the canned chick peas and wash in cool water to remove the preserving liquids residue from chick peas.
2. Mince or crush the garlic, add to the mixing bowl, along with the lemon juice, olive oil, plain yogurt, and salt (to taste, it's up to you
3. Add the cooked gerbanzo beans to the blender/food processor, along with all the ingredients from the mixing bowl, as well as the Tahini.
4. Blend all ingredients until the desired texture (really fine or coarser), and add water slowly as to get to the desired consistency.
5. Serve with pita bread, crackers, chips, or veggies! Enjoy!

Sfeha is a traditional dish that is served in the Levant (Syria, Palestine, and the surrounding areas), and it is a nostalgic meal that brings back memories of freshly-made sfeha in the street markets. Here's an awesome recipe for you to try!

Ingredients

  • Ground Beef (Lean) 1 LB
  • Pre-made Pizza Crust or Dough Similar to Pizza Consistency
  • Tomato Paste 2 Tb
  • Pomegranate Molasses 3 Ts
  • Chopped Tomatos 2 Cups
  • Chopped Onion 1 Cup
  • Salt (to taste or cover)
  • Al-Salam Sfeha Spices (to taste)



You will also need
  • Grill or baking sheet, tongs, skillet, and spatula

Prep & Cooking Instructions

1. Cook the onions for a bit until transparent but not brown.
2. Once onions are transparent, add in the chopped tomatoes, chopped onions, ground beef, tomato paste, pomegranate molasses, and the Al-Salam Sfeha Spices.
3. Cook the topping mixture approximately half way, as to allow the meat to cook while the meat pie is in the oven for the second cooking.
4. Once half way cooked, let the topping cool slightly, and apply generously on the dough (you can do square, round, or any shape that you'd like)
4. Cook inside oven at 350 degree F. until the crust is golden brown, not too brown unless you like to crispy/crunchy.

Chicken Shawarma is usually prepared on a vertical rotisserie until tender, and then shaved onto pita bread with pickles, tomatoes, and other tasty fillings.

Ingredients

  • Chicken Breast & Dark Meat (deboned) 1 LB
  • Al-Salam Chicken Shawarma Spices 1.5 Tb or up to you
  • Plain Yogurt 2 Tb
  • Lemon Juice 4 Ts
  • Oil or Butter 2 Ts
  • Vinegar & Water Solution 1 Ts
  • Onion & Garlic Pure 2 Tb combined (or more if you like it garlicky)
  • Salt (to taste or cover)



You will also need
  • Mixing bowl, grill or baking sheet, tongs, skillet, and spatula

Prep & Cooking Instructions

1. Cut the chicken into thin strips and cover with the Al-Salam Chicken Shawarma Spices (use some, leave some for marinate mix).
2. In the mixing bowl, mix together the wet ingredients, including the plain yogurt, lemon juice, oil or butter, vinegar & water, Al-Salam Chicken Shawarma Spices, and onion & garlic puree.
3. Once fully mixed, add in the spice-covered chicken gently, and gently mix. Allow to marinate for at least 3 hours, up to overnight.
4. Stir fry, bake, or rotisserie to cook. If using a rotisserie, include some extra chicken fat as to melt into the meat for a juicier Shawarma (although not super healthy lol)

Serve in pita bread, with tomatoes, cucumber and turnip pickle slices, and garlic sauce.
